There are many changes in Safari with iOS13 and iPad OS and some of them were explored in articles within AUSOM News November 2019.
For Example:
If you tap the X (top-left of an open Tab) you will close the Tab.
Long-press on the X gives the options to:
•Copy,
• Close Other Tabs,
• Arrange Tabs by Title, or
• Arrange Tabs by Website.
Do you want to access the recent (Google) searches on your Mac when running Safari?
Try removing all text from the search field.
Then click or tap the magnifying glass at the left-end of the search field.

If you want to open the Preferences in Safari, Mail, Pages… try holding down the Command key and press the comma key.
The screenshot below shows Preferences… followed by Command Comma.
If you want to learn more about keyboard shortcuts it is worth looking carefully at the symbols shown each time you select a menu item.
